Wagyu Beef Resources

Wagyu is a Japanese word that means “Japanese cow”, and a term that encompasses 4 specific breeds of cow – brown, polled, shorthorn and black. Kobe beef is specifically Wagyu that comes from the Kobe jurisdiction of Japan, around the city of Kobe. Wagyu beef can come from anywhere in the world – Japan, Australia, the US, even Argentina. While different regions have different methods of raising their cattle, the myths that Wagyu or Kobe beef are massaged or fed cattle are largely tall stories. While Wagyu cattle are prized and well-cared for, they pretty much live a regular cow life.


What makes Wagyu so special is in its genes. These breeds are blessed with naturally abundant and fine intramuscular fat, called marbling. Marbling is the key to Wagyu, those fine webs of fat making the meat butter tender and creamy, velvety while still robustly beefy. A combination that meat-lovers covet, and what makes Wagyu so sought-after and expensive.
