The perfect way to impress all your friends and guests, this premium Wagyu tenderloin roast not only looks elegant on the dinner table but also tastes amazing. Easily roasted for a gourmet meal for the whole family, it can also be transformed into individual filet mignons with minimal effort. Tucked under the ribs, doing next to nothing, the tenderloin (as its name suggests) is the tenderest portion of meat on any cow and boasts a fine-grained, almost velvety texture. Normally one of the leanest cuts as well, when made from premium Wagyu beef, this portion is transformed into a well-marbled roast, giving it an extra rich buttery flavor and a melt-in-the-mouth quality you simply won’t find anywhere else.

The amount of marbling in a cut of Wagyu often referred to as a piece of meat’s ‘MS’ ranges from 3 - 9, with 3, being the leanest and 9, the most heavily marbled and succulent. While even the lowest ranking Wagyu seems positively extravagant when compared to regular grass-fed beef, the higher the number, the richer and more flavorsome the meat becomes, making 9, a singularly delightful eating experience not many of us have the chance to know. Sourced from one of the leading Wagyu beef purveyors in the Southern Hemisphere, we get our MS9 Wagyu tenderloin from Greg Norman meats. Carefully following the same traditional practices used in Japan, these Australian cattle are direct descendants of the same cows that produced the world-renowned Kobe beef. Allowed to range free in the vast open grassland of the Australian outback until fully matured, their final 300 days are spent on a strict diet of carefully combined grains that lend this incredible meat wonderfully rich flavor and beautiful marbling.
