The Elk Denver Leg includes: the rump or top sirloin, the inside round or knuckle, the bottom round and the top round. Cut it into roasts, steaks, medallions, noisettes, with enough trimmings left over for venison stew, stir-fries and chili. Our elk meat comes from 100% Cervena Wapiti X Elk, always from free-range, grass-fed animals in New Zealand, naturally raised with no hormones, antibiotics or steroids.
