Iberico Pork
To find out what makes for that melt-in-your-mouth texture and superbly sweet flavor of Iberico, you need to dig deep, right into the genetic makeup of black Iberico pigs. These black pigs have a genetic disposition to marbling, but are also very active, running around, foraging and rooting, developing muscle full of intramuscular fat, which renders into sweet, juicy and buttery meat. Their diet also helps: the Dehesa, Spanish forests, are full of acorn trees, and once those fall, the pigs go to town and gorge on them, making their meat nutty and even sweeter.
