The spine has been removed, leaving the ribs left intact, revealing a crown-like ridge dense with meat. Stack a few of these in a circle and you can even make your own crown rack roast! Since this is Iberico pork, the meat is wonderfully marbled, but with a firm texture, requiring a long slow roast or braise to unleash out its inner potential. Alternatively, cut it into juicy loin chops ready for grilling. Either way, that marbled fat will melt during cooking and baste the meat with nutty-sweet flavors, creating an unbeatable presentation piece at your next big banquet.
