A cut from the lower part of the legs - the shanks - venison Osso Bucco is generally a smallish cut with the bone left in. The meat surrounding the bone is superbly flavorful, and perfect for slow cooking and braising until it falls of the bone. Our venison Osso Bucco comes from grass-fed and pasture-raised New Zealand Red Deer. Naturally lean, rich in protein, this is the leanest and most flavorful Osso Bucco you’ll ever taste.
