Large, tender and moist, capon is chicken like you've never seen, or tasted, before. Very rich and incredibly flavorful, capons are roosters that have been gelded at a young age, the lack of hormones rendering the meat mild, not gamy like a regular rooster’s. Capons are big and have more body fat than chicken (they’re mellow birds that don’t move around too much), which means the breasts are extra large and the meat is extra tender. Perfect for roasting, and a great alternative to turkey during Thanksgiving and Christmas.
