The beef shoulder clod is one of two subprimals located within the chuck, located right below the chuck roll and above the brisket. While generally relegated to the world of roasts or hamburgers, the shoulder clod offers so much more! Home to one of the most tender cuts available on the cow (the beef shoulder top blade), the clod can be broken down into flat iron and ranch steaks, London broil roasts, or cubed and used for kebabs or stew meat. Celebrated for its wonderfully rich and tender characteristics, Wagyu beef is considered a luxury beef thanks to its high ratio of intramuscular fat. This fat, or marbling as it's often called, imbues the meat with a savory, buttery flavor and a tender juiciness other forms of beef cannot attain. Raised using the same time-tested farming methods that have been employed in Japan for centuries, our Wagyu Shoulder clod comes instead from Australia but uses those same practices to ensure the buttery, soft texture and juicy, savory flavor we associate with premium Wagyu beef.

Raised without any antibiotics, hormones, or growth stimulants, the health and wholesomeness of these Australian Wagyu cattle are at the center of their sustainable farming practices. Fed a strict diet of fiber and a high energy concentrate made from rice, wheat, and hay, these cows are fed up to three times a day for sometimes up to two years until the cattle have reached the point where 50% of their body weight is made up of fat. Only then can they achieve that melt-in-your-mouth quality that makes Wagyu beef so special.

Ranked MS3 on the Australian Marbling Score, while representing the leaner end of the spectrum, this Wagyu shoulder clod still boasts more marbling and a softer, more tender texture than even the richest grass-fed beef varieties.
