Wagyu Rib Eye, MS8, Cut To Order

This all-natural whole Wagyu Rib Eye from Australia’s Greg Norman Signature brand is cut from a wet-aged Signature Wagyu prime rib roast. It’s available whole (the full, uncut 11 lb. muscle) or expertly hand-cut by our butchers into Rib Eye Steaks.

With Wagyu beef, the higher the grade, the more marbling the meat has, and the softer, richer it becomes - the scale goes from 1 to 12. At Marble Score 8, Wagyu goes from spectacular to simply sublime. Here we enter the top tier of Wagyu beef, the scores that fall into the “excellent” category, the top classification: 8 through 12.

Our Greg Norman Signature MS8 Rib Eye is a bold, flavorful steak that is also decadently rich and melt-in-your-mouth buttery. It has an incredible amount of that gorgeous marbling - those creamy tendrils of lustrous, high quality intramuscular fat. A word of warning: enjoy this in small, controlled portions. It can be almost overwhelmingly rich if served in large quantities.

Grilling advice: We suggest that you cook on a grill pan rather than an open flame, as that extra fat marbling on Wagyu beef will melt over the grill and may cause flare-ups. Grill to medium-rare.

Cutting details: Please note that not all steaks will be exactly the same size, and some steaks will be cut a bit thicker or a bit thinner, but we’ll try to keep it as close to what you requested as is possible. If there are any trimmings left over after the cutting process, of course those will be included as well.

  • Marked chilled, this product will arrive in a vacuum-sealed bag.
  • Unopened, use or freeze within 7 days of receipt. Once you've opened the vacuum-sealed bag, use or freeze within 1 day.
  • If frozen, keep in the freezer for up to 6 months. To defrost, thaw overnight in the fridge, then use within 3 days.

Product Questions And Answers

Q: Concerning the ms8 ribeye. With that grade of marbeling will the flavor be to much to eat a larger portion of meat. I have heard that with higher grades the flavor can be so robust that it is better to eat smaller cuts. If so what grade would you recommend
A: Indeed, it is recommended to serve higher marble scores such as MS7, MS8 and MS9 in smaller portions as the meat is very rich and flavorful. For large serving portions we would recommend an MS5 or MS6 Rib Eye instead, however it all comes down to personal preference.

Q: If I order a cut to order are the steaks then individually vac sealed?
A: Yes, all the resulting pieces will be individually vacuum packaged.

Q: I was thinking about ordering a whole Wagyu ribeye. In the description, it says these are wet-aged. I was actually thinking about dry-aging one myself. Would it be a bad idea since your product is wet-aged? Can I get a whole ribeye without the wet-aging? Thanks!
A: All our Wagyu beef products are wet-aged so unfortunately we cannot supply the rib eye without the wet-aging. However, you can still dry age the meat as the aging processes are different and thus will not affect the rib eye.
