These incredible steaks come from 100% Australian Wagyu beef. Wagyu are a special breed of Japanese cow, naturally predisposed to intramuscular marbling, which makes the meat buttery-soft and mouthwatering.
Culotte is also known as the Top Sirloin Cap or Baseball steak, and it’s cut from the sirloin. It has a rather large fat “cap” – that’s expertly trimmed, but which gives it loads of flavor. Perfect for grilling, pan-frying, and great in kabobs.
These superb Wagyu Coulotte Steaks come in at a Marble Score 3, which means they have a great amount of creamy fat marbling throughout to make it super tender and flavorful, but no huge chunks of fat to interfere with a smooth eating experience.
Broadleaf Game is one of Australia’s most well-known meat and game companies. Their Wagyu cows are from the same stock as the cows used to produce the acclaimed Japanese Kobe beef, making this, essentially, Australian Kobe. They’re raised naturally and humanely in open pastures, then finished with 300 days of grain feed, never given hormones or antibiotics.
