Quail Breast Medallions, Boneless

A small and flavorful little bird that was served at the best tables a century ago, in modern times the quail has ceded center stage to its meatier, larger cousins, the chicken and turkey. But boneless quail is an incredibly flavorful delicacy that, unlike chicken, is full of rich dark meat. It is tender and moist, juicy, with a very mild gamey flavor that’s fantastic in all manner of recipes, especially when wrapped in bacon to really bring out the succulent flavor. Those who appreciate the tender, moist dark meat of quail will rejoice in these completely boneless, easy to prepare quail breast medallions. Instead of roasting a single – or rather many – quail, you can just simply stir-fry, bake or cook these breasts quickly and easily. Prepare fajitas, sliders, salads, and stir-fries, without having to contend with bones or tricky trussing. Each breast is about 1 oz. each, so this is great for a sophisticated appetizer.

The small size of this bird makes for an elegant presentation, and also cooks quickly. The natural leanness makes this easy to overcook, so keep an eye on it. Because we’re talking about dark meat, you can serve quail breast a bit rare, without any risk – and it will retain more moisture.

Not quite as good as the bone-in quail as far as taste, but so easy to prepare and eat. Just some oil and spices and grill them quickly on each side.
