Also known as European-Style squab, our semi-boneless whole squab comes with the wings and legs still attached, but the torso deboned, for the most elegant presentation and least amount of work – no tiny bones to remove before you add the stuffing or for eating.

Connoisseurs have known for centuries that this little pigeon is a delicacy in its own right, but it seems the modern public’s love for the bland chicken breast has largely obscured its appeal. What is a squab? Simply a young pigeon, reared for food – don’t confuse it with the city bird! This flavorful bird is tender, filled with red, rich meat that’s high in protein and low in fat, all in a perfect, single-serve little package! Our King Cal Squab comes Squab Producers in California, an agricultural coop that has been around since the 1940s, supplying all-natural, healthy birds reared on a special diet of grains and high proteins for larger, meatier birds with full, broad breasts. Their squab is air chilled, so you don't get any additional moisture from retained water.

Whole squab can be served roasted, grilled, braised, or baked, stuffed with your favorite stuffing, rubbed with a marinade, and paired with a wine or sweet fruit sauce.

These are my favorite. Such tasty squab but also easy to grill and eat with fewer bones. Well worth it.
