A favorite form of charcuterie since the days of Ancient Rome, Bresaola originated as most ancient recipes do, as a way to preserve food. Classically made from the best cuts of the legs of free-range fully-matured cattle bred on the pasture lands of the Italian Alps and Apennines, our Bresaola from Broadleaf is instead sourced from rich and luxuriously marbled Australian Wagyu cattle. Trading the mountainside for the vast expanses of the Australian outback, our Bresaola boasts a distinctly creamy texture thanks to its superior marbling and an intensely beefy flavor that gourmands and foodies find irresistible.

Masterfully hand-trimmed by expert butchers to remove all exterior fat and any chewy tendons. Carefully inspected, only beef that conforms to the very highest standards can be used in the production of our gourmet Bresaola. Once the beef is prepared and assessed to ensure quality, it is then rubbed down generously with a combination of salt and spices. While every producer has their signature blend of spices they prefer, you're almost certain to see a heady blend in some ratio of garlic, cinnamon, nutmeg, bay leaves, black pepper, and juniper berries.
