They source their lean pork belly from Canadian family farms, and then marinate them in maple syrup for several days to imbue them with an oaky, sweet succulence. Then they double-smoke them over applewood and hand-trim them into bacon rashers that are bold in flavor, rich in aroma and crisply textured.
Preparing the bacon is as simple as pan-frying it to your desired crispness. But you can also cook it on a ridged cookie sheet in the oven for approximately 20 minutes at 375° F. Add a smear of butter for added indulgence!
