Our New Zealand lamb is smaller and milder than the American version, so you’ll find it really flavorful, but less gamey and intense, and more suited to all palates. You’ll see some beautiful fine marbling on these racks, which will melt deliciously into the meat as it cooks. We love lamb cooked to a medium point, although some swear that lamb should always be served medium-rare. Whichever way you prefer it, our rich New Zealand lamb will cook to tender, full flavored perfection.
