Q: Is this a Choice, Prime or other cut, How is the marbling on average? Thanks,
A: Grass Fed Beef is not graded by USDA, it is in its own category. The meat from Grass Fed cattle is leaner compared to the regular beef meat, so it will not have much marbling to it.

Q: What is beef culottes and how do you cook it
A: Beef Coulotte is a boneless, flat triangle-shaped muscle that is the cap of the Top Sirloin Butt. It can be prepared just as regular Sirloin, although it is recommended to marinade it beforehand as it tends to be tougher in texture. It is however a very flavorful cut.
