Berkshires (also known as Kurobuta when they come from Japan) are a heritage breed of pig, coveted and prized for their natural marbling. That fine, high-quality fat gives Berkshire pork a silky, delicately smooth texture, while a special diet of nuts and grasses gives the meat a sweet and nutty flavor that’s impossible to forget.
The Boston Butt does not actually come from the rear of the animal: it’s a shoulder cut, large and hearty, presented with the skin still on. This is a cut meant for slow and long cooking, until you can just pull if off the bone with your bare fingers in all its juicy, moist goodness. Use your favorite rub or marinade, or just plain salt and pepper to let the flavors shine. Pair with a variety of sauces like chimichurri, bbq sauce or mojo.
