  1. Brush and peel the potatoes. Slice (use your preferred thickness). Heat the peanut oil in a heavy bottomed pan and fry the potatoes for about 2 minutes or until golden, in small batches. Remove excess oil with paper towels.
  2. Heat the peanut oil in a heavy-bottomed pan (make sure it's very hot - and be careful!). Add the potatoes in small batches and fry until golden - 2 minutes just about. Let the excess oil be absorbed by paper towels on a plate.
  3. In a big metal bowl that can fit all your french fries at once, add the truffle oil and swirl until the bowl is well coated, add the fries, season with salt (you can use truffle salt or pink salt), then toss until all the fries are coated.
