Lamb and Guinness Shepherd's Pie Recipe Instructions

Ingredients

  • 1 ½ tbsp. extra virgin olive oil
  • 3 garlic cloves chopped
  • 1 onion, chopped
  • 6 tomatoes, peeled, deseeded and cubed
  • 1 cup carrots, peeled and cubed
  • 1 lb. lamb meat, cubed (small) or ground
  • 1 cup beef stock
  • 1 cup Guinness Beer
  • 2 tbsp. Worcestershire sauce
  • 1 tsp. thyme
  • 1 cup green beans
  • 1 cup peas
  • 1 cup corn
  • 6 potatoes, peeled and cubed
  • 1 stick butter<, cubed
  • ½ cup milk, hot
  • ½ cup shredded Cheddar cheese

Directions

  1. Heat the oil in a pan over medium heat and cook the garlic, onion and tomatoes until they are tender, 5 to 7 minutes, stirring.
  2. Add salt, black pepper and carrots, cook, stirring, until carrots are just tender, 5-7 minutes.
  3. Add lamb meat and cook until fully cooked, 6-8 minutes, then pour beef stock, beer and Worcestershire sauce, bring to boil and simmer on low about 8-10 minutes. Add beans, peas and corn and cook 3 minutes more, then remove from heat and transfer to a baking dish.
  4. Boil the potatoes until tender, then mash with the butter and milk, season with salt and pepper to taste.
  5. Turn oven to medium.
  6. Cover the lamb filling with the mashed potatoes, making a neat and smooth layer, then sprinkle with cheddar cheese. Bake 20-25 minutes or until golden brown.
