Iberico Loin Roast In BBQ Sauce Recipe Instructions

Ingredients

  • 1 whole Iberico Bellota Pork Bone In Loin
  • 1 cup of brown sugar
  • 3 tbsp. of ground mustard powder
  • 3 tbsp. of smoked black pepper
  • 2 tbsp. Paprika
  • 1 tbsp. of garlic powder
  • 2 tbsp. salt
  • 1 cup of your favorite barbecue sauce

Directions

  1. Mix spices and sugar in a bowl for the rub, then coat both sides of the pork loin (make sure to fully coat). Reserve, covered in the fridge for at least 2 hs.
  2. Bring oven to 350F.
  3. Cook in a roasting pan until the internal temperature reaches 140F (this is about 20-25 minutes per pound of meat). Remove from the oven, brush with the bbq sauce, bring oven up to 400F and continue cooking for another 10-15 minutes.
  4. Take out of the oven and let the meat rest for 10 minutes. Slice between bones for serving.
