Venison Sausage with Blueberries and Merlot Wine

Getting sophistication into a pork casing is hard, but this terrific sausage made of Canadian red deer meat blended with rich blueberries and sweet Merlot manages to do just that. Perfectly seasoned with fine Herbes de Provence, piney juniper berries and other herbs and spices. Venison blueberry sausage is great on it’s own, grilled with some caramelized onions or dice and sliced into other dishes – like casseroles, ragouts, pasta sauces, rice and risotto, soups and any other preparation.
